4 tablespoons Extra Virgin Olive Oil
2.5 cups unbleached, all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
0.5 teaspoon salt
1 cup evaporated skim milk
Recipe
Preheat oven to 425 degrees. In a large bowl, mix together the dry ingredients (flour, baking powder, baking soda and salt), and make a well in the center. In a separate bowl, stir together the wet ingredients (olive oil and evaporated milk). Pour the wet ingredients into the well, and stir until the mixture has a doughy consistency. Remove the dough from a bowl, and knead briefly on a lightly floured surface. Using a rolling pin, flatten the dough evenly into a piece 1-inch thick. Using a 2-inch round cutter, the dough should make about 16 biscuits. Bake until lightly browned (about 10 minutes) on a non-stick baking sheet. Best served fresh from the oven.
