Quickie Olive Oil Biscuits

1 cup self-rising flour
3 tablespoons extra-virgin olive oil
1/4 cup milk
Recipe
Preheat oven to 400 degrees
Place the flour in a small bowl. Make a well and add the olive oil and the milk. Stir until blended and a soft dough is formed. Add more or less milk to adjust the consistency if desired. Do not overwork, or biscuits will be tough.
Drop the soft dough from a spoon onto a baking sheet spritzed with no-stick baking spray. Bake about 10 minutes. Serves 2.
