White Cheddar Biscuits

4 cups flour
2 Tbsp. baking powder
1/2 tsp salt
1/2 cup shortening
1/4 cup butter
2 cups finely shredded sharp white cheddar cheese
2 tsp white pepper or black pepper
1 1/2 cups milk
1 beaten egg
1/2 tsp water
Recipe
Preheat oven to 400 degrees. Lightly grease a large baking sheet; set aside. In a large mixing bowl stir together flour, baking powder, and salt. Using a pastry blender or two knives, cut in shortening and butter until mixture resembles course crumbs. Add cheese and pepper; mix well. Make a well in the center of the flour mixture. Add milk all at once; stir until just moistened. Turn dough out onto floured surface. Knead dough 10 to 15 stokes until almost smooth. Divide dough in half. Roll or pat each half of dough into a 6 inch square, about 1 inch thick. Using a sharp knife, cut both squares of dough into 2 inch squares. Combine egg and water. Brush tops of biscuits with egg mixture. Place on prepared baking sheet. Bake for 13 to 15 minutes until golden. Serve warm. Makes about 18 bisquits.
