Buttermilk Cinnamon Coffee Bread

2 loaves or 5 mini loaves
4 cups of all-purpose flour
2 teaspoons of baking powder
1 teaspoon of salt
½ cup of vegetable oil
2 ½ cups of sugar, divided
2 cups of buttermilk
2 eggs
1 tablespoon of ground cinnamon
1 to 2 tablespoons of finely chopped walnuts
Recipe
In a large mixing bowl combine flour, baking soda and salt. In a small bowl, combine oil and 1½ cups of sugar. Add buttermilk and eggs; mix well. Stir into dry ingredients just until moistened. Fill 2 greased 8x4x2 inch pans or 5 5x2x1/2 inch loaf pans about one-third full. Combine cinnamon and remaining sugar; sprinkle half over the batter. Top with remaining batter and cinnamon-sugar. Swirl batter with a knife. Sprinkle with nuts. Bake at 350 degrees for 44-55 minutes or until a toothpick inserted near the center comes out clean. Cool in pans for 10 minutes before removing to a wire rack.
