Cinnamon Muffin Bread

List of Ingredients




2 cups flour
1 cup sugar
2 tsp. cinnamon
4 tsp. baking powder
1 tsp salt
1 cup buttermilk
1/3 c oil
2 tsp vanilla
2 beaten eggs
Topping
2 tbs. sugar
1 tsp. cinnamon
2 Tbs. butter or margarine

Combine all the dry ingredients. Combine all the wet ingredients. Blend both mixtures together just until combined. Pour into a greased 9 inch loaf pan. Combine the sugar, cinnamon and butter and sprinkle over top of loaf and swirl with a knife to marble into the batter Note: you may omit the topping if desired. Bake in a 350F oven 50 to 55 minutes or tested done. Cool completely before slicing. Flavor improves if allowed to sit overnight. Freezes well. .
Yield: 1 medium size loaf
