Curt Shilliing's Lemon Blueberry Muffins

List of Ingredients
2 cups of flour
2/3 cup of sugar
1 teaspoon of baking powder
1 teaspoon of baking soda
1 cup of lemon yogurt
1/2 teaspoon of salt
1/4 cup of butter/margarine, melted
1 egg, lightly beaten
1 to 2 teaspoons grated lemon peel
1 teaspoon of vanilla
2 cups of blueberries, fresh or frozen
Preheat oven to 400ºF. Combine dry ingredients in large bowl. Stir in blueberries. In separate bowl, blend wet ingredients, including lemon peel. Add wet to dry and stir until just combined, do not over mix. Fill greased muffin cups and bake for 20 to 25 minutes or until cake tester inserted in center of one muffin comes out clean.
Cool on rack for five minutes before removing from pan; finish cooling on rack. Makes: 12 muffins
