    Hushpuppy Muffins

    Makes about 24 mini hushpuppy muffins

    1 box of jiffy corn muffin mix (or a corn muffin mix of your choice)
    1 egg
    1/3 cup milk(low fat if you please)
    2 oz cream cheese
    1 cup of scallions (loosely packed & 1/4" sliced)
    1 1/2 teaspoons of your favorite Cajun spice mix (salt free preferred)

    Preheat the oven to 350 degrees.

    Blend ingredients. Batter will be slightly lumpy.
    For maximum crown on the muffins let batter rest
    for 3 or 4 minutes before filling pans.

    Using a non-stick vegetable spray, or soft butter, lubricate mini muffin pans thoroughly avoiding the area outside the muffin cups. Where there is not muffin mix, the lubricant will burn.

    Fill each muffin cup 3/4 of the way.

    Baked for 15 to 20 minutes or until golden brown.
    Rub tops of muffins with butter (optional)

    Serve hot with meals, refrigerate or freeze in a ziplock bag for later use.
