Lemon/Lime Muffins

2 cups all-purpose flour
1/2 cup plus 2 Tablespoons white sugar
1 Tablespoon baking powder
1/2 teaspoon salt
1/2 cup butter
Rind of small lemon and lime, finely grated
1/4 cup fresh lemon juice
1/4 cup fresh lime juice
2 large eggs
Recipe
Heat oven to 400 degrees. Grease 12 muffin cups. Combine flour, 1/2 cup sugar, baking powder, and salt. Melt butter and cool slightly. Stir in lemon and lime juices and rinds. Beat in eggs, then stir this liquid into the flour mixture just until moistened. Batter will be lumpy. Pour batter into prepared muffin cups. Sprinkle tops of muffins with remaining 2 tablespoons sugar and, if desired, a pinch of coconut. Bake muffins 15 to 20 minutes until peaks are nicely browned.
