Lemon Blueberry Muffins

2 cups flour
1 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
1/2 cup oil
1 cup half and half
1 teaspoon lemon extract
2 eggs
1 cup blueberries
zest of 1 lemon
bit of sugar
Recipe
Preheat oven to 425 degrees. Line a 12-muffin tin with paper baking cups.
Combine dry ingredients in a bowl. In a larger bowl, combine oil, half and half, lemon extract, and eggs. Stir the dry ingredients into larger bowl until moistened. Mix blueberries with lemon zest and sugar. Fold into batter. Fill cups 3/4 full. Bake 18 to 23 minutes or until golden brown.
