    2 cups all-purpose flour
    1/3 cup sugar
    2 1/2 tsp. baking powder
    1/2 tsp. salt
    1 egg, beaten
    grated rind of 1 lemon
    1/2 cup lemon juice
    1/4 cup plus 1 tblsp. milk
    1/4 cup salad oil
    1/2 cup blueberries

    Preheat oven to 400 F. Grease bottoms of 12 muffin cups or use paper liners. In a large bowl, mix flour, sugar, baking powder, and salt. In a small bowl, mix remaining ingredients except berries. Form a well in flour mixture and add egg mixture all at once. Stir just until flour is moistened (avoid over mixing). Gently fold in blueberries. Spoon batter into prepared muffin cups. Bake 15 to 20 minutes in preheated oven until tops are golden brown. Remove from pan and cool on wire rack. Makes 12 muffins.
