    Low Carb 100% Whole Wheat Bread

    1 3/4 oz. slice = 18.96 carbohydrates
    119.02 calories

    Loaf = 16 slices using Presto Guide

    Total calories per loaf = 1904.33
    Total carbohydrates per loaf = 303.51
    Give or take provided my math is right.

    100% WHOLE WHEAT BREAD

    1 3/4 c. buttermilk, room temperature
    1 T. lecithin granules
    2 T. extra virgin olive oil
    1 T. sugar
    1 t. sea salt or other
    3 1/3 c. 100% whole wheat flour (15 oz.)
    2 t. Red Star Instant Active Dry Yeast

    Put into pan in order given. Bake on basic
    cycle.

    This makes a light moist bread. If you prefer
    a more dry bread reduce oil or omit oil.
    You might experiment and use 1 T. applesauce
    plus 1 T. lecithin granules. This would reduce
    calories but check carbohydrates in the
    applesauce.

    Whole wheat flour absorbs a little slower
    than bread flour and may or may not raise
    glucose as fast. Calorie and carbohydrate
    count is the same for both flours. Everyone
    does not absorb food at the same rate so
    it is necessary for each individual to determine
    whether the above recipe meets their needs.

    Honey may be substituted for the sugar. Both
    are carbohydrates but honey has frutose or
    what is referred to as levulos (sp) and may
    or may not have a slower absorption rate.

    Any sweetner with "ose" at end of word is a
    sugar.
