Luscious Lemon Bread

( uses cake method, addition of lemon extract, lemon rind plus fresh lemon glaze make this recipe quite delicious )
1/3 cup butter melted
1 cup sugar
1 1/2 cups flour
2 eggs
1 tsp salt
1 1/2 Tbs fresh grated lemon rind
3 Tbs. lemon flavor extract
2 tsp. baking powder
1/2 cup milk
Glaze:
1/4 cup fresh lemon juice
1/2 cup granulated sugar
Yield: 1 loaf




In a bowl combine the melted butter, sugar, lemon extract and beat in eggs. In another bowl, combine the remainder of the dry ingredients.Stir the dry ingredients into the first mixture alternating with the milk, beating to blend . Place into a greased 9 inch loaf pan. Bake 350F for about 1 hour or tested done. Cool 10 minutes in pan and carefully remove. Pierce top of bread with fork . Drizzle on combined glaze ingredients. Let cool completely. Wrap in foil and let stand overnight before slicing.
Yield: 1 loaf which freezes well
