Not Your Ordinary Muffins

2 cups all-purpose flour
1 cup white sugar
2 teaspoons baking soda
2 teaspoons cinnamon
1/2 teaspoon salt
2 cups grated carrot (2 large or 3 medium)
1/2 cup raisins
1/2 cup finely ground nuts (walnut or pecan)
1 cup cranberries, not dried (if not available, use 1 apple - Granny Smith or McIntosh - peeled and finely chopped)
Lemon or orange zest (if using apple instead of cranberries)
3 eggs
1 cup salad oil
2 teaspoons vanilla
Recipe
In a large bowl, mix flour, sugar, baking soda, cinnamon, and salt. Stir in carrot, raisins, nuts, and cranberries or apple. (Cranberries are best because they provide a flavorful "zing"; if using apple, lemon or orange zest is nice.) In another bowl, beat eggs, oil, and vanilla. Stir this into the flour mixture until batter is just combined (batter will be heavy).
Fill prepared muffin cups (either oiled or sprayed with non-stick cooking spray - no paper liners). Bake at 350 degrees for 12 to 15 minutes.
Makes: 12 to 16 muffins.
