    Filling:
    1/4 cup oil
    1 cup chopped onion
    2 clove garlic, minced
    Freshly ground black pepper
    1 8-oz. can sliced mushrooms
    2 T. tomato paste
    2 eggs, lightly beaten

    Heat oil; saute onions, garlic, salt and pepper until onions are
    glossy. Add mushrooms, tomato paste, and eggs. Stir until eggs
    are cooked. Cool

    Batter:

    Place the following in a blender:

    1 1/4 cups milk
    1/3 cup oil
    3 T grated parmesan
    1 1/4 cups flour
    1/2 tsp. salt
    1 tsp. baking powdr
    2 eggs
    Stuffed olives

    Grease 1 1/2 small muffin tins. Drop 1 scant tablespoon batter
    in each cup. Add 1 scant tablespoon filling. Add more batter.
    Place 1/2 stuffed olive on top. Bake 12 minutes. Or they can
    be frozen at this point and reheated in a 300 F oven for 10
    minutes.

    Makes about 3 dozen.
