The Perfect Peach Muffins

2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, lightly beaten
1 cup (scant) peach yogurt
1/4 cup vegetable oil
1 cup canned peaches, drained and cut up in small pieces
Recipe
In a large bowl combine flour, sugar, baking powder, baking soda, and salt. Combine eggs, yogurt, and oil; mix well. Stir into dry ingredients just until moistened. Gently fold in cut up peaches. Put into well-greased muffin cups. Bake at 400 degrees for 18 to 20 minutes.
Makes: 1 dozen muffins
