Upside Down Banana Pecan Muffins

1/2 cup brown sugar
1/2 cup butter, softened
2/3 cup chopped pecans
2 cups flour
1/2 cup sugar
1 Tablespoon baking powder
1 teaspoon cinnamon
1/2 teaspoon salt
2 eggs
1/2 cup oil
2 bananas, mashed
1 teaspoon vanilla
Recipe
Preheat oven to 375 degrees. Grease 12 muffin cups.
In a small bowl, combine brown sugar, butter, and pecans. Place 1 Tablespoon into prepared cups. Combine flour, sugar, baking powder, cinnamon, and salt in a separate bowl. Set aside. In mixer, mix eggs, oil, bananas, and vanilla. Add flour mixture.
Fill prepared cups with batter. Bake for 20 minutes.
Makes: Twelve 3/4-inch cookies.
