Vermont Maple Cornmeal Muffins

1 cup flour (all-purpose or 1/2 cup all-purpose plus 1/2 cup cup whole-wheat pastry)
1/3 cup cornmeal
1 teaspoon baking powder
pinch of salt
1 egg
1/4 cup vegetable oil
1/4 cup maple syrup
1/2 cup milk
Recipe
Preheat oven to 400 degrees.
In a medium bowl, stir together the flour, cornmeal, baking powder, and salt. With a fork, make a well in the middle of the flour mixture. Beat egg in a measuring cup and pour it in the well. Add the oil, syrup, and milk to the well. Stir the wet ingredients into the dry ingredients until they are blended. Do not over mix. Use a 1/4-cup measure to divide the batter equally among 6 muffins cups that have been coated with cooking spray. Bake at 400 degrees for 20 minutes.
