    Zucchini Fruit and Nut Bread

    3 cups shredded zucchini
    1/2 cup chocolate chips
    1/2 cup chopped nuts
    1 cup well drained canned fruit cocktail
    2 tsp vanilla
    3 eggs
    1 cup oil
    2 cups sugar
    3 cups flour
    2 tsp baking soda
    1 tsp salt
    Optional: some cinnamon/nutmeg

    Beat together oil, sugar, eggs and vanilla with mixer.. Combine zucchini, nuts, chips, fruit and mix well. Add to creamed mixture, blending well.. Combine flour, salt and baking soda. Stir in flour mixture and stir well by hand. Divide mixture into 2 loaf pans ( 8 is best or 9 inch ) and bake 325F 60 to 70 minutes and set in center. Remove from pans after 15 minutes of cooling and cool completely. Wrap and store and slice the following day. Freezes well
    Note: because of the high sugar content this tends to burn!. I bake loaves on 2 insulated oven sheets on the middle rack.
