Zucchini Nut Bread

3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon cloves
2 cups granulated sugar
3 eggs
1 cup peanut oil
1 teaspoon vanilla extract
2 cups grated squash
1 cup chopped peanuts
Mix all dry ingredients. Blend in eggs, oil, vanilla and squash. Stir peanuts into batter. Divide mixture in half and spread in 2 well greased 8-1/2 x 4-1/2 inch loaf pans. Bake at 325° F. for 1 hour. Yields 2 loaves, 12 slices per loaf.
