6 Week Bran Muffins

List of Ingredients
1 large box "Raisin bran" 16-18 oz.
2 c brown sugar
1/2 c toasted Wheat germ
5 tsp salt
5 tsp baking powder
Combine the above in a very large bowl.
Add 1 c chopped nuts of choice
1/2 c raisins or we like currants
1 c grated carrots ,2 c chopped apple these two are optional.
1 qt buttermilk
4 eggs,( you can use eggbeaters)
Recipe
Beat the eggs a little with some of the buttermilk before adding them.
Now wipe your brow and grab the largest wooden spoon you have and mix all up real well. It will be a heavy batter.
Bake in greased or lined muffin tins 2/3 rd full at 400 degrees 15-20 min this makes about 9 doz. and they freeze well.
The batter can be stored up to 6 weeks in the refrigerator in a tupper ware type container.
Bake as needed, BUT DO NOT STIR THE DOUGH WHEN YOU USE IT.
NOW IT WILL BE FUN TO SEE THE OTHER RECIPES. I know some use "all Bran", that you soak in hot water first, but we never liked those.
