Banana Oatmeal Muffins

1 C. rolled oats, uncooked
1/3 C. brown sugar, firmly packed
1/3 C. vegetable oil
1 t. vanilla
2 bananas, mashed
1 C. skim milk
3 egg whites
1 1/2 C. flour
2 t. baking powder
1/8 t. salt
1 t. cinnamon
1/4 t. allspice
Recipe
Preheat oven to 400*. Combine oats, brown sugar, oil, vanilla, bananas and milk in bowl. Mix well and set aside. In separate bowl, whip egg whites until fluffy; fold into oat mixture. In a separate bowl, combine flour, baking powder, salt, cinnamon and allspice; gradually add dry ingredients to batter. Line muffin pans with paper cups and fill cups 2/3 way with batter. Bake 18 - 20 minutes or until golden brown.
