Banana Sour Cream Bread

1 cup softened butter
2 cups sugar
4 eggs
2 cups ripe mashed bananas (the riper the better)
1 teaspoon vanilla
4 cups sifted all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
|¼ teaspoon salt
3 tablespoons regular or light sour cream
1 cup chopped walnuts
Recipe
Preheat oven to 350 degrees depending on the type of pans you use. Grease and flour 2 (8 ½ x 4 ½ inch) loaf pans.
In large mixing bowl, cream together butter and sugar. Add eggs, 1 at a time, mixing well after each addition. Mix in bananas and vanilla. Sift together flour, baking soda, baking powder and salt. Add to creamed mixture alternately with sour cream. Stir in walnuts. Bake for 45 to 50 minutes, or until done. Cool on a wire rack.
Serves 30.
