Bannocks are what Americans call English muffins
List of Ingredients
1-1/2 C. warm water
1 tsp. molasses or maple syrup
1 C. barley flour
1/4 C. self-rising flour (self-rising flour can be made at home by adding 1-1/2 tsp. baking powder and 1/2 tsp. salt to 1 C. all-purpose flour)

1/2 tsp. salt
Recipe
Preheat a 12-inch seasoned frying pan or any size griddle over medium heat.
Mix 1/2 C. of water with the molasses or syrup. Sift the dry ingredients together over a large bowl. Stir in the liquid to make a soft dough, adding as much as 1 C. of additional water if necessary.
Turn the dough out onto a floured board and flour your hands. Gently form the dough into 6 balls. Flatten each ball to 1/2-inch thickness. Sprinkle the griddle with flour and cook all the bannocks at once until the undersides are brown (about 10 minutes). Flip over and cook the other side.
Serve warm, split open to recieve whatever spread you choose.
Yield: 6 3-inch rounds.
