List of Ingredients
3 cups tepid water
1 cup barley flour
1/2 cup Vita Wheat Gluten
1/4 cup whole millet
1/4 cup whole poppy seed
1/4 cup whole flax seed
1/2 cup whole raw sunflower seed
1 1/2 cups oat flakes (don’t use instant or quick cook oats
1/4 cup yeast
Mix all these ingredients together thoroughly. It should be about the texture of thick pancake batter. Then add and mix well:
1/2 cup lite olive oil
1/2 cup honey
2 tsp. sea salt
Then add:
3 3/4 cups whole wheat bread flour
Mix in and begin to knead. This will take 4 minutes by machine (quite a bit longer by hand and should be done on an oiled, no floured, board. This dough is quite sticky to knead by hand, but just keep working it and it will smooth out. Shape into loaves, buns, flats, etc., and let double in size. Bake at 375 degrees (about 45-55 minutes for a large loaf).
