Blueberry Muffins w/Honey-Pistachio

1/2 cup plus 2 TBSP butter
2 cups unbleached flour
1/2 cup plus 3 TBSP sugar
2 tsp. baking powder
1 large egg
1/2 cup milk
1 tsp. pure vanilla
2 cups blueberries
Recipe
Preheat oven to 400°. Melt butter and set aside to cool. Use 1 TBSP of melted butter to grease a 12-cup muffin tin.
In a large bowl, sift together flour, sugar and baking powder. In a separate bowl lightly beat egg; add milk, remaining butter and vanilla. Mix liquid and dry ingredients to moisten. Stir in blueberries. Fill muffin cups 3/4 full. Bake 20-25 minutes.
HONEY-PISTACHIO BUTTER:
1/4 cup butter, softened
1 TBSP honey
2 TBSP shelled & chopped unsalted California pistachios
Pinch of cinnaman
In a small bowl, blend.
Makes 6 Tablespoons of butter
