Cheese and Scallion Cornbread

1c yellow cornmeal
1c unsifted plain flour
2Tbsp sugar
2tsp baking powder
1tsp salt
1c shredded Cheddar cheese
3/4c chopped scallions
1c each buttermilk & sour cream
1 egg
1/4c veg oil
Recipe
1. Preheat oven to 375. Grease 13x9x2 baking pan.
2. In bowl, mix cornmeal, flour, sugar, baking powder and salt. In another bowl, mix 3/4c cheese, 1/2c scallions, the buttermilk, sour cream, egg, and oil; add to cornmeal mixture. Mix; spread in pan. Top with remaining cheese and scallions.
3. Bake 25 min. or until toothpick comes out clean.
Makes 20 servings.
