Chocolate Chip Cherry Muffins

2 cups flour
2 cups chocolate chips-divided
1/4 cup firmly packed brown sugar
1/4 cup granulated sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 cup maraschino cherries
1/2 tsp. salt
3/4 cup milk
1/3 cup vegetable oil
1 egg


Recipe



In a large bowl, combine flour, 1-3/4 cup chips, brown sugar, granulated sugar, baking powder, baking soda & salt. Stir in cherries. In a small bowl combine milk, oil & egg until well blended. Add liquid ingredients to the dry ingredients. Stir just until moistened. Spoon batter greased muffin tins. Sprinkle with remaining 1/4 cup chocolate chips. Bake in preheated 375° oven for 18-20 minutes or until golden.
