    1.5 tablespoons Extra Virgin Olive Oil, plus some for oiling the pan
    3 eggs
    1 cup low-fat milk
    1 cup unbleached, all-purpose flour
    1 teaspoon light brown sugar
    0.25 teaspoon salt

    Recipe



    Preheat oven to 400 degrees. Lightly grease with olive oil 10-12 muffin cups. Blend all ingredients in a food processor. Ladle batter into each muffin cup, filling each cup only half way. Bake for about 35 minutes, until popovers are browned and firm. Serve warm.

    Makes 10-12 popovers.
