    Corn Muffins Filled with Strawberry Jam

    3 3/4 cups all-purpose flour
    1 1/4 cups yellow cornmeal
    5 teaspoons baking powder
    1/2 cup sugar
    1 teaspoon salt
    2 egg
    1/2 cup vegetable oil
    1/8 teaspoon nutmeg
    1 1/2 cups buttermilk
    1/3 cup strawberry jam

    Grease a 12 cup muffin tin. With an electric mixer combine the flour, cornstarch, baking powder, sugar and salt. Then add eggs, oil and nutmeg. Put the mixer on medium speed and pour in the buttermilk.

    Fill the muffin cups very full, then fill the center of each muffin with a teaspoon of jam and press the jam into the middle of the batter. Place the muffin pan on a baking sheet and bake in the middle of a preheated 400 degree oven for 30 minutes. Leave in the pan for a few minutes to cool.
