Eight Mile Brook Raspberry Muffins

1 1/2 cups flour
1/4 cup brown sugar
2 tsp baking powder
1 tsp cinnamon
2 egg whites
1/2 cup reduced calorie tub margarine
1/2 cup skim milk
1 cup fresh or frozen (unsweetened) raspberries
1 tsp grated lemon peel
Recipe
Combine first 5 ingredients in a bowl.
In another bowl, mix egg whites, margarine and milk. Stir in flour mixture just until moistened.
Fold in berries and lemon peel. If using frozen berries, thaw and drain.
Spoon batter into muffin cups sprayed with non-stick spray.
Bake at 350 for 20-25 minutes.
Makes 12 muffins
