4 C. apples, peeled and diced into 1/4" pieces
1 C. sugar
1 1/2 C. raisins
1 1/2 C. chopped nuts
2 eggs
1/2 C. vegetable oil
2 t. vanilla extract
2 C. all-purpose flour
1 1/2 t. baking soda
2 t. cinnamon
1/8 t. salt
Recipe
In a large bowl, combine apples, sugar, raisins and nuts; set aside. In another bowl, beat eggs, oil and vanilla; stir into apple mixture. Combine dry ingredients; carefully fold into apple mixture. Do not over mix. Fill muffin cups almost to the top. Bake at 375* for 18 - 20 minutes or until muffins test done. Makes about 18 muffins.
