J.D. Hayworth's Mexican Cornbread

List of Ingredients
1 1/2 lb. lean ground beef
2 jalapeno peppers, chopped
1 onion chopped
salt to taste
1/2 lb. grated Cheddar cheese
Batter:
1 c. corn meal
3/4 tsp. salt
1/2 tsp. soda
2 eggs, beaten
1 c. milk
1 can cream style corn
1/4 c. bacon drippings (hot)
Recipe
Preheat oven to 400ºF. Saute meat, onions, and peppers. Put 1/2 of the batter in a hot greased skillet; cover with meat, then grated cheese. Pour remaining batter on top and bake at 400º F until browned, approximately 35 to 45 minutes.
Serves 8.
