1 can (17 oz.) fruit cocktail
1-3/4 cup flour
1/3 cup sugar
2 tsp. baking powder
3/4 tsp. salt
1/2 tsp. cardamom, allspice or cinnamon
2 eggs, beaten
1/4 cup butter, melted
1 tbsp. grated lemon rind
Recipe
Drain fruit cocktail, reserving syrup. If necessary, add water to syrup to make 2/3 cup of liquid. Sift together the flour, sugar, baking powder, salt and spice. Stir syrup into the flour mixture along with the eggs, melted butter and lemon rind. Mix only until all dry ingredients are moistened. Stir in drained fruit. Fill well greased muffin tins 2/3 full. Bake at 400 degrees for 20 to 25 minutes. Turn out and cool on a wire rack. Makes 12 3-inch muffins.
