Mandarin Orange Coconut Muffins

3/4 cup flour
3/4 cup whole wheat flour
2/3 cup toasted wheat germ
1/2 cup sugar
1/2 cup coconut
1-1/2 tsp.baking soda
1/2 tsp. salt
1 cup dairy sour cream
2 eggs
1 can (11 ounces) mandarin oranges, drained
Recipe
In a large bowl, combine flours, wheat germ, sugar, coconut, baking soda and salt. In small bowl, blend sour cream, eggs and oranges. Stir into flour mixture just until moistened.
Spoon into buttered 2-1/2 inch muffin cups, filling 3/4 full. Bake in preheated 400 F. oven 18 to 20 minutes or until wooden pick inserted in center comes out clean. Remove from pan. Cool on wire rack.
