Pineapple Quickbread

1/2 cup canned pineapple tidbits in water
1/3 cup skim dry powdered milk
1 egg
3 Tbsp yellow cornmeal
2 tsp flour
1 tsp baking powder
1/2 tsp vanilla extract
2 packets of Splenda
1 1/2 tsp silvered almonds
1 tsp butter
Recipe
Preheat over to 350 degrees.
Add everything except butter and almonds to a blender. Blend until smooth. Spray small round baking pan with cooking spray. Pour mixture into pan. Sprinkle with almonds. Bake 20 minutes or until pulls away from the side just a little. Flip out of the pan and spread butter on the top.
Makes 2 servings
