Spicy Apple Carrot Bread

1/2 cup shredded carrots (medium grate)
1 cup shredded tart apple (such as Granny Smith)
2 large eggs
1/2 cup vegetable oil
3/4 cup sugar
1 teaspoon vanilla
1 1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
3/4 teaspoon ground ginger
1/4 teaspoon freshly ground nutmeg
1 cup chopped walnuts
1 cup raisins (optional) I left these out.
Recipe
Preheat the oven to 375 F. butter one 8 1/2 x 4 1/2 inch loaf pan.
In a large mixing bowl, stir together the carrots, apple, eggs, oil, sugar, and vanilla. In another bowl, stir the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg together and add to the egg mixture. Stir just until blended. Stir in the walnuts and raisins. Turn the batter into the prepared pan.
Bake loaf for 1 hour or until a knife inserted in the center comes out clean. Cool for 5 minutes in the pan and then turn out on a wire rack to cool. Makes 1 large loaf.
If it is not done in the amount of time stated, continue baking until the loaf tests done. If the loaf appears to be browning too quickly, place a small piece of foil over the top to prevent it from becoming too dark.
***May want to offer it with a tray of sliced cheeses and a bowlful of whipped butter seasoned with a bit of cinnamon.
