Tomato Corn Muffins

1 cup flour
1 cup cornmeal
1/4 cup grated Parmesan cheese
1/4 cup sugar
2 Tbsp. baking powder
1/2 tsp. paprika
1/2 tsp. salt
1/2 tsp. dried oregano
1/2 cup EXTRA VIRGIN OLIVE OIL
1 egg, beaten
1 cup milk
2 plum tomatoes, peeled. seeded and chopped
1/2 cup diced mozzarella cheese
1 clove garlic, minced
Recipe
1. Preheat oven to 400 degrees.
2. In a large bowl, whisk together the flour, corn meal, Parmesan cheese, sugar, baking powder, paprika, salt and oregano.
3. In a medium bowl, stir together the OLIVE OIL, egg, milk, tomato, cheese and garlic.
4. Gently stir in flour just until dry ingredients are moistened.
5. Spoon into greased muffin cups. Bake 15-20 minutes--until risen and golden.
Makes 12 muffins
