Vanilla Upside-Down Muffins

1 package (6 serving size) vanilla pudding and pie filling (not instant)
1/2 cup (1 stick) margarine or butter, melted
1 package Betty Crocker apple cinnamon or wild blueberry muffin mix
Recipe
Heat oven to 400 degrees. Mix dry pudding and pie filling with margarine. Divide evenly among 8 ungreased medium muffin cups, 2-1/2x1-1/4". Prepare muffin mix as directed on package. Spoon onto pudding in muffin cups, filling about 3/4th full. Bake as directed. Immediately invert onto wire rack or heatproof serving plate. Let pan remain over muffins for about a minute. Makes 8 muffins.
