Wine & Cheese Muffins

2 c.Bisquick Original baking mix
2/3 c.white wine OR 2/3 c apple juice
2 T. vegetable oil
1 egg
1 c.(4oz.) shredded Swiss, Gruyere or Cheddar
2 t. chopped fresh or freeze-dried chive
Recipe
Heat oven to 400°. Line 12 medium muffin cups 2 1/2 x 1 1/4 inches, with paper baking cups or grease entire cup generously. Mix baking mix, wine, oil and egg with fork in medium bowl; beat vigorously 30 strokes. Stir in
cheese and chives. Divide batter evenly among cups.
Bake about 20 minutes or until golden brown. Immediately remove from pan. Serve warm.
