    1 cup of thawed frozen egg substitute
    3/4 cup of all purpose flour
    1/2 cup of applesauce
    1/2 cup of low fat buttermilk (1% milk fat)
    2 tablespoons plus 2 teaspoons of margarine, melted and cooled
    1 teaspoon of ground cinnamon
    3/4 teaspoon of granulated sugar
    1/4 teaspoon of baking soda

    Preheat your oven to 425º F.
    Spray four 10 ounce custard cups with nonstick cooking spray, set aside.
    In a blender process all ingredients until smooth.
    Pour 1/4 of batter into each prepared cup.
    Set the cups on baking sheet and bake in middle of center oven rack for 25 minutes, until puffed and golden brown.
    Using a knife, pierce the top of each popover to allow steam to escape, bake for 5 minutes longer.
    Makes 4 servings
