Banana Blueberry Pancakes

1 cup unbleached flour
1 cup whole wheat flour
1 Tbs. baking powder
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/2 tsp. salt
1/4 cups sugar
1 large or 2 small very ripe bananas
1 1/4 cups milk
2 large eggs
1/2 tsp. vanilla extract
1/3 cup flavorless vegetable oil
1 cup blueberries

Yield: 4 servings
Combine the dry ingredients in a large mixing bowl; toss to mix. Puree the banana in a food processor, gradually adding the milk, then the eggs and vanilla. Make a well in the dry ingredients, add the liquid, and stir just to blend. Stir in the oil, then fold in the berries. Let the batter rest for 5 minutes, then cook on a preheated greased griddle or skillet for about 1 1/2 minutes, flip, and cook for about 1 minute on the second side. Serve hot.
