    Banana Nut Bread French Toast

    2 large bananas
    2c flour
    1t baking soda
    1t baking powder
    1c sugar
    1/2 c oil
    2 eggs
    1oz milk
    1t vanilla
    1c nuts (pecans, walnuts, etc)

    Mash bananas in bowl, mix dry ingredients, except sugar, in another bowl.
    Mix in sugar, oil, eggs, to bananas. Mix well, add vanilla and milk.
    Add dry ingredients to wet ingredients, then add nuts.
    Pour into a greased, floured loaf pan (4x8) Bake at 350° until a toothpick comes out clean.

    French Toast Batter:
    6 eggs
    1c half and half
    1/4 t cinnamon
    1t vanilla
    pinch salt
    Whisk vigorously.
    Method:
    Slice bread 1/2" thick. Dip into French toast batter and carefully place onto hot buttered griddle.
    Cook 2-3 minutes until golden brown and turn over for another 1-2 minutes.
    Serve garnished with fresh fruit or whipped cream and sprinkle with confectioner’s sugar.
    Tastes fabulous with Massachusetts maple syrup on top!
