Banana Stuffed French Toast Mascarpone

8 pieces Challah bread, 1 inch thick
1 lb. mascarpone cheese, softened
3 bananas, sliced horizontally, ½ inch thick
3 whole eggs, whisked to frothy
¼ c. sugar, plus 2 Tb.
1 Tb. pure vanilla
½ c. milk
3 Tb. butter
1 6oz. package frozen raspberries
2 Tb. lemon juice
3 mint sprigs, plus 4 mint sprigs for garnish
Recipe
Mix together eggs, ¼ c. sugar, vanilla and milk. Add butter.
For Raspberry Mint Coulis, combine frozen raspberries, lemon juice, 2 Tb. sugar, mint springs, and puree until smooth
If making recipe day before, put bread on cookie sheet and leave uncovered overnight. The drying process will assist in the absorption.
Spread a heaping portion of mascarpone on bread.
Top with bananas, a little more cheese, and cover with next slice of bread.
Pan fry in butter and garnish with fresh mint sprigs.
Spoon liberal amounts of coulis on or under French toast.
