List of Ingredients
1 to 2 Tbs. vegetable oil
2 cups frozen hashbrowns
4 eggs, lightly beaten
1/2 cup salsa
2 Tbs. milk
1/2 cup shredded Cheddar cheese
Crushed red pepper
Salt
Pepper
Recipe
Heat a large skillet over medium-high heat. Add vegetable oil; add hashbrowns in an even layer. Cook until golden-brown on one side.
In a small mixing bowl, combine eggs, milk, and salsa.
Flip hashbrowns in skillet; add egg mixture. Reduce heat to low and cook 2 minutes; flip and cook 2 more minutes. Sprinkle with Cheddar cheese. Sprinkle with crushed red pepper, salt, and pepper to taste.
Serve with crispy bacon and hot coffee.
