Coconut French Toast

1 1/2 cup unsweetened coconut milk
2 eggs
1 tsp vanilla
1/2 cup flaked coconut
1/2 tsp salt
8 1-inch slices white bread
Recipe
Whisk together the unsweetened coconut milk, eggs, vanilla, flaked coconut and salt. Place eight 1-inch thick slices of white bread in a shallow dish, pour egg mixture over bread, turn bread to coat and let stand 10 minutes. Cook 2 slices of bread at a time in 2 tablespoons of butter in a large skillet over medium heat, 3 minutes on each side. Place cooked slices in a large baking dish, sprinkle with coconut and bake at 350 degrees for 8 minutes. Top with fresh fruit, warm syrup or confectioners sugar.
