    Cooking spray
    1/2 pound breakfast sausage *
    3 eggs
    1 cup buttermilk pancake mix
    1/2 cup cottage cheese
    6 oz. Monterey Jack cheese, shredded
    2 Tbs. cooking oil (this can be omitted if sausage is not drained)
    2 tsp. dried parsley
    1/4 tsp. dried Italian seasoning
    1/4 tsp. cayenne pepper

    * The original recipe called for Little Smokies sausage links cut into 1/2-inch
    pieces and microwaved for two minutes. Use 8 oz. if substituted.

    4 generous servings

    Preheat oven to 350º. Spray a 6x11-inch baking dish with cooking spray.

    Cook sausage and crumble until brown. Set aside.

    In a large mixing bowl, beat the eggs until frothy. Lightly spoon the pancake
    mix into the bowl, mixing with the eggs. Add the cottage cheese, Monterey
    Jack cheese, oil, parsley, Italian seasonings, cayenne pepper and the sausage.
    Stir until well blended.

    Pour into prepared baking dish and bake 25 to 30 minutes until golden brown. Can be served with maple syrup or fruit salsa, if desired.
