    Cut 3 English Muffins in half, butter, and place buttered side down in 9" x 13" pan. Top with sliced or cubed Ham and sliced or diced Green Chilies. Whisk together 1 dozen Eggs, 1 cup Sour Cream, Garlic Salt, and Oregano. Add shredded Jack/Cheddar Cheese (1 cup or so), if desired. Pour over English Muffins. Cover dish and store in refrigerator overnight.

    Preheat oven to 350°. Remove cover and bake for approximately 1 hour. Remove from oven when the egg mixture is firm. Garnish with additional shredded Cheese and Parsley. Pearl Tomato Halves that have marinated in Olive Oil and Garlic Salt are fun to assemble around edge of plate.

    Serves 6.
