    List of Ingredients




    2 cups lukewarm milk
    1 1/4 oz package of active dry yeast
    4 egg yolks
    2 1/2 cups all-purpose flour
    1/2 tsp salt
    1 tablespoon sugar
    1 tsp cinnamon
    1/2 tsp nutmeg
    1 tsp vanilla extract
    1/2 cup melted butter (1 stick)
    4 egg whites

    Pour milk into a large mixing bowl, sprinkle the yeast over the top. Stir well until dissolved (make sure no lumps remain). Beat egg yolks and add to cooled yeast mixture. Combine the flour, salt, sugar, cinnamon and nutmeg; add to mixture. Add vanilla. Stir in melted butter. Combine completely. Beat egg whites until stiff and fold into the batter. Let the mixture stand in a warm place for 1 hour or until double in size (or place cover over pan and leave in refrigerator overnight -- allowing a good hour to warm and raise before cooking.) Using a Belgian waffle iron, fill the tray with about 1 1/2 cups of the mixture. Cook until golden brown. Serve with whipped cream and blueberry topping and syrup.
    Makes 6 servings.
