Ham & Cheese Omelet Roll

4 oz. cream cheese, softened
3/4 c. milk
2 T. flour
1/4 t. salt
12 eggs
2 T. Dijon mustard
6 oz. cheddar cheese, shredded
8 oz. ham, finely chopped
1/4 c. green onion tops, thinly sliced

Recipe
Preheat oven to 375°. Combine cream cheese and milk. Whisk until smooth. Add flour and salt, then add eggs. Mix well. Press parchment paper into bottom and up the sides of a jelly-roll pan. Spray the pan to keep the paper in place. Pour egg mixture into pan and bake 30 to 33 minutes. Egg mixture should be puffy and golden. When egg mixture is done, remove from oven and immediately spread the Dijon mustard over it. Sprinkle with 1/2 of the cheese. Top with ham and onion and then sprinkle with the rest of the cheese. Roll up jelly-roll fashion and let stand for 5 minutes. Slice.
