    4 eggs, well beaten
    1/2 cup flour
    1/2 tsp. salt
    1/2 cup milk
    2 Tbs. butter
    Powdered sugar
    1 lemon, juiced

    2 servings

    Preheat oven to 400�.

    Sift together flour and salt. Add alternately with milk to beaten eggs a little at a time while beating briskly. Spread butter evenly on bottom and sides of well-seasoned 10-inch cast iron skillet. Pour in batter and place in pre-heated oven. Bake 20 to 25 minutes while gradually reducing heat to 350�.

    The pancake is done when it is puffed up high above the sides of the pan and has turned golden brown. Slide pancake onto a plate, butter, sprinkle generously with powdered sugar and drizzle lemon juice over the sugar.

    The pancake will fall quickly and will be quite heavy.

    Cut into 4 wedges and serve.
